You deserve a BBQ!!
So give yourself a treat and try a new potato salad recipe.
I tried this potato salad while visiting two of my most favorite grade school friends on Whidbey Island a few short weeks back and FELL IN LOVE!
It's amazing! Everyone is going to love you.
Blue Cheese and Bacon Potato Salad
What you will need:
4-5 Medium red potatoes
1/2 White or sweet onion diced
4oz Blue cheese(diced)
4 Bacon slices(thick cut, diced)
1/2c Sour cream
1/3c Mayonnaise
The greens of 3 green onions
1/2T white vinegar
Cracked black pepper
Sea salt(or regular salt)
1/4teaspoon Cayenne pepper(don't freak out)
Getting Started
Wash and cut your red potatoes in half.
Cover them with salted water and bring to a boil.
Dice your bacon and fry up until crispy(not but not burned)

Reserve the fat
Prep your onions and set aside.
By now your potatoes should be getting close.
Remember you are not mashing these babies, so only fork tender.
When the potatoes are ready, drain and place them in an ice bath until chilled.
Once chilled Dice into 1" pieces and toss them in a deep mixing bowl.
Add your onions, bacon and blue cheese(I used this kind).

Now you are ready to add your sour cream, mayo, vinegar
salt, pepper,green onions, and cayenne pepper. It need to sit for at least 30 minutes.
Now this is where you make it YOURS.
The salt and pepper, cayenne even the amount of tangy vinegar is really up to you.
Use as much as you like.
Cooking should be laid back and enjoyable.
If I have to pull out measuring cups to make something odds are I'm not enjoying it.
I eyeballed the sour cream and mayo, and in hindsight thought I could've went a little lighter on both. I also added a spoonfull of the bacon fat we reserved for extra flavor.
...but the main thing is to stay relaxed and enjoy your potato salad masterpiece!
